ir Mark  Cubbon was the commissioner of Bangalore in the mid-19th century. He’d be glad that he’s now lent his name to a coffee shop. For not only is the Cubbon Pavilion a riotous cascade of green plants, it also takes green dining very seriously.

At every meal there are multiple counters that display tier upon tier of tiny porcelain plates with a gorgeous array of cold cuts, salads, lightly poached items with a glaze of pale olive oil, a variety of breads made of whole wheat, a mixture of grains and nuts, and even small round bread rolls that have been christened—no pun intended—Sir Mark Cubbon’s buns (because they are chutney green inside). There are desserts that are fruity and nutty with only the lightest concession made in favour of sugar and cream. Even the fruits have been boiled down to thick creamy compotes to be used with a variety of honeys, wild of course.

Overseeing this organic bounty is Chef Madhu Krishnan. “It’s a real treat to watch our young chefs snip wheat grass from a dish and place it on a cheese omelette.” More so if it’s all headed over to your table.
