Tell us about India on a Platter.

It is a travelogue—an account of my 100-day journey across India as a chef. It’s also a map and a guide for food lovers and cooks.

This book is adapted from your TV show Roti, Rasta aur India.

Yes. I couldn’t share many experiences on the show due to lack of space.

How did you chalk out your path across the country?

Like a roti, our course was round, a mix of places both familiar and missing on the food map.

How was the food experience?

Wonderfully shocking and diverse! I discovered over 200-250 unique regional cuisines. Who knew Surat was big on flavours?

Kalyan Karmakar, a leading food blogger, wrote: “Saransh Goila’s book India on a Platter is my kind of book”.

It is surprising to see how the book has been accepted.

100 days of travelling and food. Any special memory?

The entire journey!

Tell us about the difficulties in putting the journey on paper.

I write food columns but a book was new. Often, I felt unsure about the endeavour. It took me a year to complete, but it has been worth it.

Who is your food inspiration?

Sanjeev Kapoor.

#GoilaButterChicken became a trend on Twitter.

It was an experiment that started with replacing paneer with chicken in my home style Paneer Butter Masala recipe. I cooked it for some food bloggers and they loved it.

At 28, you have written a book, hosted shows, won the title of ‘India ka Super Chef’; and hold a record for longest road journey by a chef. What’s next?

I plan to set up a restaurant. Also, hopefully, a feature film on food.
